Ingredients:
1 lb ground lean turkey
1 small white onion, diced
1 large carrot, diced
1 large zucchini, diced
1 large yellow squash, diced
4 cups low sodium beef broth
16oz whole grain pasta noodles
2 tsp salt
2 tsp minced garlic
2 tsp Italian seasoning
½ tsp dried oregano
½ tsp dried basil
28oz canned tomato’s
Parmesan cheese & basil (optional)
1-2 cups water (optional)

Directions:
1. Wash hands and prepare ingredients.
2. In a large pot, cook ground turkey and onion over medium heat, stirring often, until meat is browned.
3. Add carrot, zucchini, squash, salt, garlic, Italian seasoning, oregano, basil and cook 1-2 minutes.
4. Add broth and tomatoes. Bring to a simmer over medium-high heat and add dry pasta and reduce to medium heat. Cover and cook for 10-15 minutes until pasta is cooked, stir often to keep spaghetti from
clumping. (If sauce thickens too quickly and pasta is not ready, add 1-2 cups water and keep cooking)
5. When pasta is cooked, taste and adjust seasonings as desired.
Optional: add 1 teaspoon granulated sugar if tomatoes are bitter.
6. Serve with shredded Parmesan cheese and fresh basil as desired.
