I made Red Lentil hummus today (recipe down below) because lentils have more protein and fiber than the garbanzo beans. I also wanted to see how it tasted…just FYI the red lentil hummus was amazing and easy to make! Make or buy the hummus, either way this dressing is so yummy you’ll pour it on everything! Using on a tossed green salad is also delightful.

Lemon Garlic Olive Oil
4 tablespoons olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon fresh lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
1-2 cloves garlic, minced
crumbled feta cheese (about 3 tablespoons)
2-3 teaspoons chopped fresh parsley and mint leaves
a sprinkle of red pepper flakes
Whisk together oil, juice, zest, salt, pepper and garlic. Pour over hummus (or over a salad) Top with feta, herbs and red pepper flakes.
There is enough lemon garlic olive oil to drizzle on the hummus and also extra for when serving. Enjoy with your favorite veggies, gluten-free pita or sometimes I use tortilla chips…they are gluten-free 🙂

Red Lentil hummus
1-1/2 cups cooked red lentils*
2 tablespoons olive oil
2 tablespoons tahini
11/2 tablespoons fresh lemon about half a lemon
1/4 teaspoon salt
Blend all ingredients together until smooth. Add a bit more olive oil or lemon juice if you want a thinner consistency.

*I followed the red lentil package cooking instructions and used 1/2 cup less water so they were thicker.
