It is Taco Tuesday it’s one of those taco Tuesdays where I clean out the refrigerator for you and throw everything out here on the counter I know you love these kind of meals and yes we’ve got the Holy Trinity of cheese stps out here I’ve said this before my

Family we’re the worst to like open something and then not get it all used and somebody else will open another one and then another one we’re getting these cheeses eaten tonight but this apricot jam is my inspiration for tonight’s Taco Tuesday in my Skillet I’m going to

Drizzle in a little bit of olive oil and I’ve got just a little bit of red onion over here that I’m going to dice up I want mine in pretty little pieces now I’m going to put this onion in my Skillet wasn’t as hot as I thought it should

Be I’m also o going the easy route here tonight we’re doing chicken tacos and I have a pound of this rotisserie pulled chicken and I’m going to start with about half of this container I just need about two cups of chicken and I am just

Going to chop any of the big pieces up into smaller pieces I’ve got it cut up pretty good and that looks like about two cups to me and that’s like I said about half of that package of rotisserie chicken you can really take a pound of this

Rotisserie chicken a long ways now my onions are really starting to sizzle up here I’m just going to soften them up a little bit now that my onions are getting nice and done thought I’d Scorch some garlic sounds like it’s scorching going to give that just a

You and I can’t wait to hear from you when your jams arrive we’re trying a brand new pasta salad today this one’s called deved egg pasta salad pasta salad is really just a little prep work I’m starting with six hardboiled eggs and the way that I boil mine is just to

Cover them in water put them on top of the stove as soon as they start a rolling Bowl I leave them on the hot stove VI put a lid on them and turn them off I set my timer for 19 minutes after that I run them under cold water and

Peel them immediately and I never have any problems I’m also bulling up about 8 oz of elbow macaroni I’m going to cook it about 1 minute shy of being completely done then I’m going to rinse it in cold water so it’ll stop that cooking process for our noodles and pasta salads macaroni salads

Potato salads all that stuff is so forgiving with your ingredients we’re going to try to stay as close to the recipe as we can since this is the first time I’m making it but I’m going to need about 1/3 a cup of some diced celery

This recipe just calls for a four of a cup of red onion this looks more like a third or half a cup and this looks more like A4 of a cup so I’m going to C up a little bit more celery with our avocado it didn’t tell

Us how much to start with so we’re just going to use our own personal preference here and honestly any pasta salad or potato salad or anything like that that you go to make it’s all personal preference anyway there’s just something about when spring hits I’m ready to try

All kinds of like new sandwiches new salads things like this that like you could take on a picnic and you know who am I kidding here any Tennessee we got another couple of winters left just you know get some new things I’m always excited that’s one of the first things I

Want to do whenever spring hits now I’m taking my hardboiled eggs and I’m dicing them up and I just prefer to have mine in bigger bite-sized pieces when I’m making egg salad I like to just smoosh everything up with a fork but when I’m putting eggs in like pasta or potato

Salad I kind of like to have some big chunks especially of the the white part I’ve got two more eggs to go and we’re just going to slide it all down in a big mixing bowl now we’re ready to start mixing we’re going to start with

About half a cup of mayonnaise trying to make this one just a little bit better for us we’re going to put in half a cup of a plain Greek yogurt I’m going to eyeball a big tablespoon of some Deon mustard then let’s give this a little

Mix and then a pasta salad or potato salad where you make sort of like a dressing and then you mix your main ingredient in I like to start seasoning at this point right here I think it’s good to get everything mixed in here then it will coat your other ingredients

Too that was salt and pepper I don’t know probably half a teaspoon or so of each also going to put in about a half a teaspoon of some paprika and I’m going to sprinkle in some dried parsley maybe half a teaspoon of this I wanted fresh

Parsley for this but can you believe my pickup order said they were out of stock of parsley now let’s just get that mixed in a little bit let’s put our drained pasta down in here now here comes our celery and our red onion and I’ve just thrown caution

To the wind I’m putting it all in there and I’m going to go ahead and put some of this avocado in we’re going to be eating ours this afternoon if you are going to make this ahead of time like the night before you wouldn’t want to put the avocado in it until you’re

Closer to time to serve it yeah let’s just fold this in and of course like any recipe if you want to put some broccoli or some cucumber or cauliflower or tomato or anything and everything that you might have you can just put it in here there are no rules here I love it

Whenever you guys comment back and tell me that you’ve made something and you know told me the changes that you’ve done to it y’all are so creative and have the best ideas and that’s exactly to me what like recipes are they’re suggestions they’re not you know restrictions be creative use the

Ingredients that you need to suit your diet and your lifestyle and even just your preferences let’s give it a little taste you can never tell too much after you’ve just made it it has to sit for a bit pretty good so far but I am going to

Put in a little bit more salt a little bit more pepper I love my black pepper get a little bit more parsley for some color some more paprika and then we’ll sprinkle some of this on the top before we serve it too and let’s squeeze some lemon juice on

Here you don’t want that seed or that seed or that seed or that seed just didn’t look like there were any seeds in that lemon till I started squeezing it I’m going to be making some new sandwiches tonight for supper and I thought this would go perfect with it

Also just like to have macaroni salad or pasta salad for lunch with crackers clean Fork little bite of everything on here it’s tasting really good so far going to put a lid on this we’ll have this in just a few hours and give you the final taste test I’m going to go

Ahead and start on the toppings for my sliders and these are some hot Italian sliders and this was about half of a pretty good size head of iceberg lettuce I’m shredding it up and now I’m kind of chopping it up even into smaller pieces I have done the viral grinder salad

Sandwiches on here before this is a little bit different and if you’ve never had this you’re in for a real treat just going to put this in my bowl and this looks like maybe two or three cups I’m going to put in about a third of cup of

Some mayonnaise then I’m going to season it up with a little bit of salt good little bit of black pepper to sprinkle in some garlic powder and all of this is just to your taste then some red wine vinegar and this is what makes it so so

Good I like to mix this up so it can kind of like have time to set up and all these flavors come together oh I’m missing Red Onion oh I about forgot it hang on you can leave your onion in slices like this if you want to but I

Just prefer mine in little bite-sized pieces in the original grinder salad I believe we use banana peppers maybe a couple other little things and you could definitely do that here if you wanted to but this is just kind of how I like ours and I love love love the red wine

Vinegar in mine but if you don’t you could mix this up with a little um Italian salad dressing just try whatever flavors you like give it a quick little taste M that’s perfect little bit twangy little bit sweet going to put this in the fridge until we’re ready to eat and

We’ll top our subs with it now we’re ready to make our sandwiches and I’ve got a 12pack of Hawaiian rolls here these are just the original flavor you can use slider buns you can use any kind of roll or buns that you want to really

And I hate slicing these in half but I love the way the sandwiches are on the rolls I don’t know what it is about the rolls it just tastes different than the Buns to Me Maybe it’s not so much that it tastes different but I just like the

Like open edges of the Buns so anyway we’re slicing these in half best of your aties friends hey look I done pretty good on that one then I’m just going to set my tops down here like this and set my bottoms right here I always have a little piece like that

I’ve got a package of this Hillshire Farm honey ham this is a 9 oz package and I will probably not use all of this but I’m just kind of tearing it like into pieces and then stacking it up on each little roll I’ve said this before

And I’ll say it again I love to get ham right out of the deli and have it shaved where it’s just like falling apart thin I love sliders made out of that kind of meat so when I have to use it and it’s a little bit thicker I will try to go

Ahead and like make it set on an individual bun and I actually did use almost all that ham I’ve probably got just enough left for one sandwich or something now I have some salami and you can see these are really big pieces so I’m going to cut them into

Quarters then I can just lay a little bit on each one of my rolls if you wanted turkey on here you could definitely put turkey you could use pepperoni I’m not a huge lover of salami but you know we have been a long time since I’ve had any and Patrick

Really likes it so I thought I would treat him with this today and this is the salami that I use today now we’re going to put our cheese on I’m using this sliced provolone and I think I’m also going to cut it just like I did the

Salami just to make it fit a little bit better I have melted about 2 tablespoon of butter and I’m just going to brush it across the top of the Buns we’re not going to stack these on the top or anything like that yet we’re actually

Going to bake them over here on the side seems like a good amount of butter so I think I’m going to put some on the cheese right here just get a little bit inside of our sandwich now you could definitely mix your seasonings in your butter but I just feel like if I

Sprinkle them on the top I have a little bit better control of making sure every bun has a little bit of everything so I did some black pepper going to do some garlic powder no measurements here just use to your taste when you open a new bottle it’s hard to make it come

Out and my old favorite the Italian seasoning love it now we’re going to put these in a 350° oven for 10 minutes while we’re waiting on our sandwiches we are going to make us a delicious little drink I used to make this taso passion tea all

The time back in the day when I used to make it it was in tea bags and you brewed it on top of the stove now it comes in a concentrate well I just aged myself then didn’t I back in my day we had to brew

Our fruity tea on top of the stove like peasants and we walk to school up heill both ways three miles anyway the way you use this concentrate is half the tea then the other half can be lemonade sparkling water just whatever you like any kind of fruit juice is super

With this too it’s just super bright and fresh and delicious ious you can mix it up by the gallon or the half gallon or you can just mix it right on up by the glass like I did I’ve never really been a big Starbucks girl I like my coffee

Black I’m a simple coffee purist I do like that white chocolate mocha frozen coffee thing they have I do love that but when I would find myself at Starbucks I always love to get this taso I think I say that right this passion tea I like my coffee black but I I will

Them just like that pack them up take my Salad Topping mixture for it and off we go on a picnic also not everybody loves this grinder salad mixture right here you can see I’ve already cut off a few sandwiches for if you were serving this at a party you

Could leave them like this just put the little Tops on them make a little bar and you can put this out you could even put tomatoes and banana peppers olives all the different things that your guest might want to customize these sandwiches with but as for me and the rest of my

House we’re eating the salad on top and like you got to eat this you can’t leave it sitting around like this or it’ll get yucky and Soggy got to keep this salad mixture set separate till you’re ready to eat now we’ll just put our Lids over on these and cut them up

And show Down oh my gosh friends this is absolutely delicious these sandwiches are messy they are not for the Fain of heart for those who don’t want to get messy but they are absolutely Ely delicious and the pasta salad was so so good just complimented it perfectly this is a perfect little spring outing treat

Those Tacos judt blow my mind (I use that little trick too – adding a pat of butter, bc the butter carmelizes the surface of the meat, YUMM!). I love having Pasta Salad in the frig too, for afternoons when my blood sugar dumps.
