While traditional sides for Easter are always a great thing sometimes you’re looking for something a little different and that’s what this video is for today I’m going to be sharing with you some sides that would be perfect to go with your traditional Easter dinner but it

Just changes it up a little bit hey y’all I’m Mandy and this is Mandy in the making for our first one if you were looking to get some more veggies in there because I know at least at our house we love us some mashed potatoes macaroni and cheese you know all the

Carbs if you’re looking for some more veggies this is a perfect one for Easter this is roasted asparagus and carrots with a lemon dressing first things first let’s preheat our oven to 400 I’m going to rinse my asparagus I’ve got a pound of asparagus here and then we’re going

To peel and cut our carrots to about the same length and width as our asparagus I mean I feel like this is very Easter is just with the carrots and then the Green from the asparagus that’s easy now I just need to peel these and we’re going to cut them

To be about this length so my little attempt to make these the same width and all of that it’s going to be Loosely translated okay definitely not a professional at this that’s not bad right it’s it’s pretty close just don’t look too close you know do you want to grab a baking

Sheet you can cover it in parchment paper if you’d like I’m not going to worry with that and then we’re just going to spread this out to an even layer as much as possible and we’re going to toss it in a little bit of olive oil doesn’t have to be a lot I’m

Just going to do a couple of passes over top and then just kind of toss them around we’re going to Salt and Pepper these and the magic is really going to come into this dressing that we’re going to make while these are in the oven these are going to go in the

Oven at 400 for 20 to 25 minutes and you know you probably could just do this in the air fryer as well just as easily for this next step you need a blender it would be nicer if you had a smaller blender but I don’t I just have my big

Blender and it’s a miracle that it’s clean right now cuz I use it every single day for my protein shake but it’s clean so let’s make this dressing okay we need a four of cup of lemon juice that’s that’s about right yep good job myy probably about 1 and 1/2 lemons

Just depending on the size of your lemon of course all right so let’s add that into our blender we need a couple of tablespoons of olive oil I’m just going to eyeball that that’s about one that’s about two we need two cloves of garlic oh what happened in there I broke it

That’s what happened and then we need some salt and pepper about half a teaspoon of salt what you in here making something you probably ain’t going to like oh okay and then about 1/4 teaspoon of pepper okay so I’m just going to blend this it says for about 90 seconds

Okay that’s what it looks looks like I’m going to pour it into a little measuring cup and just let it sit at room temperature until our carrots and asparagus come out of the oven feel like there’s still some chunks in mine let’s check on that there is still some chunks look at

That look at that let’s try again friends in all fairness I only blended it for like 20 seconds cuz I was like oh it’s done it it’s not though okay it’s better this time so maybe do it for the 90 seconds like it is okay all right it

Is time to take these out and check on them oh yeah they’re done so let’s go put them on a platter and now we’ve got the Finishing Touch which is this lemon garlic dressing that we’re going to just drizzle over the top there’s still a few pieces of garlic in there it’s just

Going to have to be okay I take it back Cole seems pretty excited to try this well you can go ahead and grab you one went on that first oh he needs to get him a fork a fork get you a fork thank you it’s very spring it’s for Easter happy

Frump looking frumpy this yeah this ain’t going to help the dad bom M that’s going to slim me up start tightening things up we a allow that to happen okay for our next recipe that might not be a traditional Easter side we’re going to make a grape salad it’s

Not traditional to me but I know this is traditional to a lot of people so you’ll have to let me know in the comments below do you make this salad if you do make this salad do you make it a variation of it or exactly like I’m

Making it I want to know I think the recipe calls for 2 lbs each I’ve got a little over a pound or around a pound pound and a half each of red and green grapes I just need to rinse these really good so I’ll be right back and while

Those are draining I’m going to go ahead and throw this into my microwave it says to use the whole 8 oz block because I don’t have the full amount of grapes I may use about o of this but I need to soften it and I have a soften cream

Cheese button on my microwave so I’m going to do that real quick I’m going to use my hand mixer today I don’t feel like pulling out the kitchen aid so I’ve got this large bowl we need about a cup of sour cream I might do a little less

Okay like I said I’m going to do about 6 oz of cream cheese so I took about 2 oz off that’s softened the recipe calls for about a third a cup of sugar I’m doing a little bit less and I think it’s two tpoon yeah of vanilla extract

Much there’s still fewer grapes because you know we’re just going to cover and refrigerate this until it’s time to serve and then at that point we will sprinkle the top with brown sugar and some chopped or chipped pecans that’s going in the fridge let’s make our next

Easter side this next recipe is just basically a spring salad but we’re making our own very simple vinegarette it is a lemon honey vinegret this is very simple but it’s a great light side when a lot of times a lot of the food we’re eating at these big holiday

Dinners are kind of heavy something I forgot that I was going to have to do is we are going to to toast up these slivered almonds just brings out the flavor a little bit more so I’m going to go preheat the oven to 350 I’m not

Making quite as big a salad as the original recipe that I found online so this is about a half a cup of slivered almonds that I can’t open good gracious okay um if you’re doing the full recipe a bigger salad you would need two of these bags or a whole cup these are

Going to toast for like 5 minutes at 350 while that is in the oven we’re going to make our vinegrette and even though only making half of the salad I’m going to make the full vinegarette because we have enough salad stuff here for a while

So I thought why not we need about a/ a cup of olive oil we need 5 tablespoon of freshly squeezed lemon that’s right on the money there we go we need a couple of tablespoons of Honey sir can can we cooperate it’s coming it’s just slowly coming oh good Gran these okay we’re going to leave that probably put a little bit of salt and pepper in Here okay I’ll be right back I put it in the microwave for like 3 or 4 seconds we’re just down to the wire on this one okay there’s one tablespoon isn’t this entertaining okay you my friend are done okay let me wash my hands okay so that’s all that’s

Going in here going put my lid on it make sure this is sealed up and we’re just going to shake it real good looks pretty good okay set that to the side and let’s get our what are those called let’s get our almond out of the oven one other thing

We need to do is rinse our strawberries we just got a big old thing of grass in there okay I’m going to rinse these really good and we’re going to take the tops off of them and slice them I’ve got about 5 oz of the mixed spring greens

I’m going to layer some strawberries on here next we’re going to add on our toasted slivered almonds M quality control those almonds are good and then lastly you could use feta cheese but I’m going to go with the original recipe I’ve got CR crumbled goat cheese and

Then of course when it’s time to serve we’ll shake this back up cuz it’s kind of separated a little and we’ll put this on our individual servings now just to give you the real situation of what’s going on here it is lunchtime and if you can hear

  1. Mandy, I have a question for you. About your Caraway cookware, I just saw someone on Instagram review it, and she said not to buy it, that it's not worth the price. She showed her pan, and that thing looks like it had been through the ringer more than a few times. She said it lost the nonstick in about a month, and she is unable to clean it up to make it look new. I know you and the other ladies (Jessica and Amber) use them, and they always look beautiful. I trust your opinion, what is that girl doing wrong with that cookware? I am in desperate need of new cookware and planned on getting those. I just haven't gone for it yet due to the price. I have them saved to my Amazon list just until I can swing it, but now I'm a little afraid. I need a set that will be my last set, and being in my late 50s I don't want to bother with pots and pans in the future. So do I go for it or not? Should I go ahead and invest in the pricier stainless steel that I have wanted for years? Both my son and I are cooks, so my thought was to buy an investment set then leave them to him. Honest thoughts?

  3. I love grape salad. When my daughter told me about it, I thought she was nuts. Boy was I wrong. We all love it. Salad looks really good too. I think I will try asparagus and carrots, my grandson loves both, so I will make it too.

  4. I would have cut those grapes in half. Because my teenage son accidentally sucked a grape that size down his throat and he had to be out to sleep to have it removed. He was 15 at the time. I didn't buy grapes for over a year, they made me nervous.
