Ciabatta BBQ Pulled Pork Cheddar Cheese and Pistachios Sandwich

Ingredients:
• 1 lbs pork, cut into cubes
• Salt and pepper, to taste
• Olive oil
• 1/2 onion, chopped
• 2 cloves garlic, minced
• 1/2 cup pork broth
• 1/2 cup BBQ sauce (your favorite brand or homemade)
• 1 tablespoon brown sugar
• 1/2 tablespoon apple cider vinegar
• Ciabatta
• Cheddar cheese
• BBQ Pistachios
• Micro Arugula
• Butter

Instructions:
• Preheat your oven to 325°F (160°C).
• Season the pork cubes generously with salt and pepper.
• Heat a large oven-safe pot or Dutch oven over medium-high heat. Add a drizzle of olive oil.
• Once the pot is hot, add the pork cubes in batches and brown them on all sides. Transfer the browned pork cubes to a plate and set aside.
• In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant, about 3-4 minutes.
• Return the browned pork cubes to the pot. Add the pork broth, BBQ sauce, brown sugar, and apple cider vinegar. Stir to combine.
• Cover the pot with a lid and transfer it to the preheated oven.
• Let the pork cook in the oven for about 3 hours, or until it’s fork-tender and easily shreds apart.
• Once the pork is cooked, remove it from the oven.
• Cut pistachios into smaller pieces.
• Cut the ciabatta horizontally.
• Spread butter on both parts of the bread and add cheddar cheese slices.
• Toast until golden brown and the cheese is melted.
• Add the pulled BBQ pork to the bottom part of the bread.
• Then add pistachios.
• Layer arugula generously.
• Close the sandwich.
