Raspberry and white chocolate is my top favourite flavour
Ingredients:
115g butter
225g white chocolate
2 large eggs
70g granulated sugar
2tsp vanilla
155g plain flour
1tsp salt
100g white chocolate chunks
100g raspberries (+ extra for topping)
70g raspberry jam
White chocolate chips
1) Preheat your oven to 170°C/ Gas Mark 3½/ 150°C (fan).
2) Line an 8×8" baking tin with baking paper.
3) Melt the butter and white chocolate together in the microwave in 30 second intervals, stirring frequently.
4) In a large bowl, whisk the eggs with a handheld electric whisk until foamy.
5) Add the sugar and vanilla to the eggs and whisk them in.
6) Add the white chocolate mix and whisk until combined.
7) Sift in the flour and salt and fold them in.
8) Fold in the white chocolate chunks and the raspberries.
9) Scoop the mix into your baking tin and spread it out evenly.
10) Dollop some raspberry jam on top and swirl it through with a knife.
11) Add some white chocolate chips and more raspberries on top.
12) Bake for 35-45 minutes and allow it to cool fully in the tin.
13) Enjoy!
