Home-made, with a bold and rich taste our GNOCCHI AU GRATIN WITH VEGETABLES

500gr potato gnocchi
250gr grilled vegetables
200gr red cherry tomato sauce
150gr smoked scamorza
100gr Parmigiano Reggiano
½ onion
1 garlic clove
Extra virgin olive oil
Fresh basil
Salt

Finely chop the onion and roast in a pan with a drizzle of oil and one garlic clove.
Add the grilled vegetables, the cherry tomato sauce and some fresh basil leaves. Correct salt and cook for 5 minutes.
Meanwhile, cook the gnocchi in salted boiling water for 5 minutes.
Drain the gnocchi in the pan with the sauce and mix well. Turn off the heat.
Pour the gnocchi in a baking dish.
Add some smoked scamorza previously cut into cubes.
Add some grated Parmigiano Reggiano.
Brown in the oven at 180°for 10 min.
