Yes you read that right. I love my pasta and I love my chilli oil so I obviously had to add chilli oil to add a nice smoky twist to the dish. Recipe below 😬

Ingredients:
1 packet pasta
1 bottle passata
1 small Aubergine
1 small carrot
Half chopped onion
1 clove of sliced garlic
Olive oil to drizzle
1 tsp of chilli flakes
1 tsp of oregano
1/2 tsp maple syrup
1 tsp chilli oil
Salt to taste
Feta cheese to finish off

Recipe:
Bring water to a rolling boil, add salt and some olive oil. The water should taste like sea water and then add pasta to it.
Cut a small aubergine into cubes, coat it with some olive oil and bake in the over for 15 minutes at 200 degrees.

In a pan heat some olive oil, add sliced garlic, chopped carrot, onion and sauté till it’s soft. Add passata with chilli flakes, oregano, maple syrup, chilli oil and let it simmer for 15 minutes.

Add baked aubergine, cooked pasta and some pasta water. Toss for 5 minutes and finish off with crumbled feta cheese. Enjoy ☺️
