MARINATED PEPPERS & MOZZARELLA is a tasty make-ahead addition to any meal. For example, you can add these marinated vegetables and marinated cheese to sandwiches or as a topping for crostini. You can also add them to salads, antipasto and charcuterie platters. You can toss them in pasta for a healthy meal. If you like, serve them as a stand-alone snack or as a healthy appetizer.

MARINATED PEPPERS & MOZZARELLA
1 pound mini sweet peppers
5 – ounces fresh mozzarella cheese balls (or pearls)
1/2 cup olive oil, plus more to coat peppers
4 – 5 large cloves garlic, crushed & roughly chopped
zest from half a lemon
1/2 tsp red pepper flaked
1/2 tsp salt, plus more if needed
1/2 tsp dried Italian seasoning
1 lemon, juiced
fresh basil leaves, roughly chopped, to taste

1. In a container or a large bowl whisk olive oil, garlic, lemon zest, red pepper flakes, salt and dried Italian seasoning. Set aside.
2. Line a sheet pan with aluminum foil. Set aside. Coat peppers with olive oil. Place peppers on baking pan in a single layer. Place in oven and heat oven to 375°F. Roast in oven until slightly charred and tender, 20 to 25 minutes. Remove from oven and completely cool.
3. Once cooled, carefully peel skin from peppers. Add cooled peppers and mozzarella to the container with the oil mixture. Stir until fully coated. Cover container with a lid and refrigerate overnight, tossing occasionally.
4. Remove from refrigerator 1 hour before serving. Stir in lemon juice. Before serving, add fresh basil. Serve.
