Grandma has finally figured out the kind of waffles I remember, no recipe has made muster until now. This recipe is from the 1925 St. Stephen’s Church Guild Cookbook from Paynesville but I made some revisions to make it keto. OMGosh, they are crispy and light and airy and heavenly!

It made 3 for me in my vintage waffle maker with no sticking. Note my sweet cow butter dish I got from the Goodwill.

BEST KETO WAFFLES: Servings 2-3
1 large egg, separated
1/2 c. almond flour
1/4 c. King Arthur Keto flour
1/2 c. almond milk
2 T. butter, melted
1 t. vanilla
1 t. baking powder
Pinch salt

Turn on waffle iron.

Beat egg white until medium peaks and set aside. Beat flours and milk together. Add butter, vanilla, egg yolk and beat again. Then add baking powder and salt and beat for 1 minute more. Gently fold in beaten egg white.

Bake until lightly browned and serve. I use Lakanto Monkfruit Syrup and I didn’t add any extra butter as it was in the waffles.
