So this is my somewhat bastardized vegetarian take on tacos inspired by the flavors in Al Pastor.

Ingredients:

Soy chunks

Mushrooms – finely sliced

Onion – finely sliced

Garlic – minced

Soy sauce

Veggie broth

Achiote paste

Chipotle salsa

Corn tortillas

Pineapple

Cilantro

Lime

Process:
Rehydrate soy chunks in boiling water. Let cool.

Squeeze out water from soy chunks.

Add soy sauce and achiote paste to soy mix and set aside.

Saute chopped onions and mushrooms ~ 15 minutes.

Add garlic and spices.

Add soy chunks, cook until they start sticking to pan.

Deglaze with broth, add chipotle salsa, and let cook down.

Finally, I heated up the corn tortillas in the pan, then added the soy mixture and topped with pineapple, coriander, and lime juice.
