Oven-baked Chicken Thighs with Honey Mustard Sauce and Rice

Ingredients:
• 1 cup White Rice
• 4-6 boneless, skinless chicken thighs
• Salt
• Black pepper
• Chicken Blend
• Honey Chili Glaze
• Olive oil

For the Honey Mustard Sauce:
• 3 tablespoons Dijon mustard
• 2 tablespoons honey
• 2 cloves garlic, minced
• 1 tablespoon soy sauce
• 1 tablespoon olive oil
• 1 tablespoon lemon juice
• Salt and pepper, to taste

Instructions:
• Cook the rice according to the package instructions.
• Preheat your oven to 400°F (200°C).
• Season the chicken thighs with salt, pepper, and other preferred seasonings (I also used honey chili glaze and chicken blend).
• Heat olive oil in an oven-safe skillet over medium-high heat.
• Once hot, add the chicken thighs to the skillet and sear for about 3-4 minutes on each side until they develop a golden brown color.
• While the chicken is cooking, prepare the honey mustard sauce. In a small bowl, whisk together the Dijon mustard, honey, minced garlic, soy sauce, olive oil, lemon juice, salt, and pepper until well combined.
• Once the chicken thighs are browned, remove the skillet from the heat.
• Pour the honey mustard sauce over the chicken thighs, coating them evenly.
• Transfer the skillet (or oven-safe pot) to the preheated oven and bake for about 25-35 minutes, or until the chicken thighs are cooked through and no longer pink in the center.
• To ensure doneness, you can use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (74°C).
• Once done, remove the skillet from the oven and let the chicken rest for a few minutes before serving.
• Serve with rice and any remaining sauce drizzled over the top.

This dish also goes well with steamed vegetables, potatoes, or a fresh salad.
