All-purpose flour – 1+3/4 cup (215g)
Ground cinnamon – 1.5 tsp
Baking soda – 1 tsp
Baking powder – 1/2 tsp
Salt – 1/4 tsp
Ripe bananas, mashed – 3~4 (1+1/2 cup)
Large eggs – 2
Oil – 1/4 cup (55g)
Unsalted butter, melted – 1/4 cup (57g)
Light brown sugar – 3/4 cup (152g)
Vanilla extract – 1 tsp
Toasted walnuts, chopped – 1 cup
Chocolate chips – 1/4 cup

1) In a mixing bowl, mash ripe bananas with a fork.
2) Add unsalted butter, oil, vanilla extract, salt, light brown sugar, and eggs. Whisk until well combined.
3) In another bowl, whisk together the flour, baking powder, baking soda, and ground cinnamon.
4) Sift and gently fold the dry ingredients into the wet. Do not overmix to avoid a dense loaf.
5) Mix in chocolate chips and 2/3 cup of toasted walnuts.
6) Brush oil on the baking pan before placing the parchment paper.
7) Pour the batter into the baking pan and smooth out the top of the batter.
8) Sprinkle the remaining 1/3 cup of walnuts on top of the batter.
9) Preheat the oven to 350Β°F (177Β°C). Bake until lightly browned on top and a toothpick inserted into the center comes out clean, about 1 hour.
10) Set aside to cool to room temperature.
