Recipe:
Pineapple Upside Down Cake
Ingredients:
1/4 cup butter
2/3 packed brown sugar
7 canned sliced pineapples
Maraschino cherries
1 1/3 cup flour
1 cup sugar
1/3 cup shortening
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1 egg

Directions:
1. Preheat oven to 350 degrees. Grease 9″ square or round pan.
2. Place the butter in the pan and put into the oven for a few minutes until it melts. Remove from the oven and sprinkle the brown sugar over the butter. Spread it evenly. Add the pineapple slices and cherries on top of the brown sugar. Set aside.
3. In a large mixing bowl, use an electric hand beater to combine the remaining ingredients. Beat on low for one minute and then on high for three minutes. Transfer to the pan and spread evenly.
4. Bake for 50-55 minutes or until a toothpick comes out clean. Immediately turn over onto a heat-proof serving plate. Wait for a minute or two before lifting off the pan. This will allow the brown sugar to drip out of the pan. Allow to cool for 5 minutes and serve. Enjoy!
