I had a long workday today, and now we are all hungry. I needed to make something fast and filling, so I baked quick oven-roasted potatoes. I always loved eating fried potatoes and onions growing up, but they take so long to cook! You have to keep turning them so they don’t burn, and I just refuse to spend my time doing that.
