Slice a green bell pepper in half and remove the inside, drizzle with some avocado oil face down and bake for 20 mins at 450. Once the timer goes off, add your meat and top with a few slices of yellow onions and halved jalapeno slices. Add a slice of provolone to each and bake for 3 more mins, then turn to broil for 2 mins.

I used a frozen bag of cauliflower rice. Cook in the microwave according to the instructions, once cooled enough to handle the bag, add to a skillet (I used a little more than half the bag) with half a can of hot rotel diced tomatoes, a couple tbsp of chopped onions, garlic salt, paprika, and chili powder.
