Butter chicken with lentils and rice – I use the Patak's brand butter chicken sauce, about 1.5 lbs chicken breast that I cook in the air fryer, and 1 14.5 oz can lentils. I sautee the lentils & sauce briefly and then dice up the chicken to add in after cooking it in the air fryer. Normally I also add in a 14.5oz can fire roasted tomatoes as well but I didn't have any this week.
I ran out of regular rice (brown and white) so I used two bags of microwaveable brown rice & quinoa (Seeds of Change brand), otherwise I'll normally prepare two cups of rice (measurement in dry) in my rice cooker.

Protein Waffles – I use the recipe on the back of the Kodiak Cakes brand pancake & waffle mix. I use milk instead of water and add egg (per the instructions) to maximize the protein so that it's ~7g protein per waffle (I use the Dash brand small waffle maker)

Red beans & rice – I buy the Zataran's family size and cook it in my rice cooker. I believe it calls for 4 1/2 cups water but I only use 4 cups in my rice cooker. I also sautéed 3 bell peppers and a Johnsonville andouille sausage that I dice up and sauteed to add to the rice after it finished cooking.

Corn muffins – I use jiffy mix and follow the instructions. It makes 6 total
(two servings of the red beans and rice were for dinner)
