Koulourakia – Greek Easter Cookie Recipe

Makes 3 large baking trays

Ingredients
200 grams white sugar
250 grams unsalted melted butter
3 eggs
125 mls olive oil
125 mls milk
1 teaspoon pure vanilla syrup
1 full heaped teaspoon grated orange rind
760 grams self raising flour
2 egg yolks for the egg wash

Mehod
1) In a large mixing bowl add sugar, 3 eggs and melted butter. Beat with an electric mixer for one minute. Add milk, olive oil, vanilla and grated orange rind, then mix until combined.

2) Gradually sift the flour into the wet ingredients whilst mixing with your hand to avoid lumps until a dough forms. Knead dough until well combined.

3) Preheat your oven on 180 degreed celsius. Line your baking trays with baking paper.

4) Take a piece of dough and roll into a ball 3-4 cm in diameter, then roll into a shape. Place on the baking tray and repeat until the dough is finished.

5) Brush dough shapes with egg wash ( 2 beaten egg yolks).

6) Place in oven for 15 to 20 minutes untill golden brown. Check frequently.

7) Remove trays from oven and let cool before storing in an airtight container.

Enjoy with tea or coffee.

    Φτιάχνει 3 μεγάλα ταψιά

    Συστατικά
    200 γραμμάρια λευκή ζάχαρη
    250 γραμμάρια ανάλατο λιωμένο βούτυρο
    3 αυγά
    125 mL ελαιόλαδο (1/2 φλυτζανι)
    125 mL γάλα (1/2 φλυτζανι)
    1 κουταλάκι του γλυκού καθαρό σιρόπι βανίλιας
    1 γεμάτο κουταλάκι του γλυκού τριμμένη φλούδα πορτοκαλιού
    760 γραμμάρια αλεύρι που φουσκώνει μόνο του
    2 κρόκοι αυγών για το αλειμμα
