Everyone’s favorite dish, risotto with mushrooms. And to make it a complete meal I added some broiled chicken breast.

Prep time: 10 mins
Cooking time: 20mins
Total: about 30 minutes

For the chicken
-1lb (450gr) of chicken breast, cut into even slices
-2 tsp salt
-1 tbsp olive oil
-10 cracks of black pepper

Recipe for 3 people
-4tbsp leek, chopped
-2 tbsp olive oil
-5 medium sized mushrooms
-1 cup (200gr) arborio or other risotto rice
-34oz (1 liter) chicken or vegetable stock
-A splash of white vine or a juice of half a lemon
-salt and pepper to taste (if your stock is seasoned with salt add less)
-30gr parmesan cheese
-30gr of butter

For garnishing I used spring onion and more parmesan cheese

Instructions
1) Preheat the oven for 360F (180C) on air convection if you have
2) Slice the chicken breasts into even pieces
3) Add oil, then salt and pepper
4) Bake for 14 to 16 minutes, depending on the oven temp. Be careful not to dry it out.
5) In the meantime chop the leek and sweat on the olive oil
6) Slice the mushrooms and add to the pan
7) Add the rice and stir for 1-2 minutes
8) Add salt, pepper, wine or lemon juice. If you add wine let it evaporate before adding the stock
9) Once the first few ladles of stock evaporates, add the rest slowly. Always stir to release as much starch from the rice as possible.
10) Once the rice is cooked, stir in the butter and parmesan cheese.
11) For garnishing, chop some green onions and grate a tbsp of parmesan cheese and top the dish with them.
