Chocolate Salami
(Lazy Cake) or Sukseh
This used to be my favorite dessert growing up, I remember always asking my mom to make it for me. This is the vegan version.
Ingredients:
21 oz vegan tea biscuits
2 cups plant based milk, I used almond
1/4 cup organic cocoa powder
1/2 cup granulated sugar
1 cup sweetened shredded coconut
4 Tbs vegan butter
150 g plant-based milk chocolate
3 Tbs organic lemon zest
Powdered sugar to sprinkle on top for serving.
Directions:
In a medium size pot, medium high heat the almond milk, add the Cocoa powder, sugar, plant-based butter, & lemon zest, whisk to combine, bring to boil. Pour over the broken up pieces of chocolate and stir to melt the chocolate. Add the coconut, add the broken biscuits, stir to combine. To shape add the biscuit mixture into parchment paper and roll into a log shape. Cover with tinfoil and freeze for at least 12 hours. It’s best after 24 hours. to serve, sprinkle powdered sugar, slice the log into one inch pieces and enjoy.
