Smoked on the grill at 225 until internal temp 120. Seared on the Blackstone that heated up the last 15 minutes of the cook.

Seasoned with just salt and pepper.

Will let the Blackstone heat up for 20 minutes next time.

    Looks great, nice marbling. Maybe I always have bad NY strips, but they’re always tough and I haven’t been a fan. What kind of wood did you smoke with? Has some very nice color.
