• Lukewarm water – 3/4 cup plus 2 tbsp. (200 milliliters)
• Salt – ½ tsp

• Vegetable oil – as needed
• Cornstarch – as needed (a very small quantity to help keeping layers separate)

Crispy edges, flaky and full of layers! It’s easier than you think Salt – ½ tsp. All-purpose flour – 2 ¼ cups (300 grams) Lukewarm water – 3/4 cup plus 2 tbsp. (200 milliliters) Mix with your hand until the flour and water are combined

Sprinkle a little flour on the work surface and transfer the dough Knead the dough until it becomes smooth and doesn’t stick anymore Almost there Perfect! Roll the dough into a log for easier cutting Cut into five equal pieces Form balls from the dough pieces Dip each dough ball in oil

Cover and let rest for 15 minutes Grease work surface with vegetable oil Spread the dough with your hands Pull the sides of the dough to thin it The kneading and the resting made our dough very elastic Continue thinning until you can see through Grease the surface with vegetable oil

Sprinkle a small amount of cornstarch on top Fold one side to the center Then the other side Lightly grease the surface Sprinkle some cornstarch Fold in half Now roll the dough Coil the dough into itself in a spiral Repeat with all the pieces Preheat the pan and oil it

Press down the “roll” until it reaches your desired thickness Fry until golden, it should take about 4-5 minutes on each side Oil the pan after each flatbread It’s so good! Crispy on edges and very flaky
