Minced Cracked Pita Recipe from Elif’s Kitchen

Ingredients:

2 cups of lukewarm water (400 grams) (0.8818 lbs)
1 tablespoon granulated sugar (22 grams) (0.0485 lbs)
1 packet of instant yeast (10 grams) (0.0220 lbs)
Half a cup of liquid oil (45 grams) (0.0992 lbs)
About 5.5 cups of flour (550 grams) (1.2125 lbs)
1 teaspoon of salt (9 grams) (0.0198 lbs)
400 grams of medium-fat ground beef
1 small onion, finely chopped
1-2 small green peppers, finely chopped
1 small size red bell pepper, finely chopped
2 medium-sized tomatoes, peeled and finely chopped
1 teaspoon of salt (9 grams) (0.0198 lbs)
Half a teaspoon of black pepper (1 gram) (0.0022 lbs)
1 teaspoon of red pepper flakes (1 gram) (0.0022 lbs)
Optional quarter cup of water
2 egg yolks (for the top)

Instructions:

Place the lukewarm water in the mixing bowl. Add the sugar and yeast and mix. Then add the liquid oil and mix again.

First, add 4 cups of flour, sprinkle the salt on top, and continue mixing while gradually adding the remaining flour. Knead until you get a soft dough that slightly sticks to your hand.

After kneading the dough thoroughly, cover it and leave it to ferment in a warm place for about 45 minutes.

While the dough is fermenting, prepare the filling: Put the ground beef, chopped onion, peppers, tomatoes, salt, black pepper, and chili flakes into a mixing bowl and knead until well combined. If the mixture seems too dry, add a little water.

After the dough has fermented, release its gas and transfer it to a floured counter. The dough should be soft in texture.

Again sprinkle some flour and divide the dough into pieces (14 equal parts).

Roll out and place them on a floured baking tray. Cover with a plastic bag to prevent drying out.

At this stage, you can immediately roll out the dough pieces.

Spread some flour on the counter and open each piece of dough into an oval shape with the help of a rolling pin.

Spread a few spoonfuls of the filling on the dough, as seen in the video, and spread it over the dough.

Then, as seen in the video, close it up.

Make sure it is tightly closed, press down lightly with your hand to shape it.

Place them spaced apart on a baking tray lined with parchment paper.

Continue shaping all the pitas until a tray is full.

As you can see, a baking tray fits 5 pitas.

Apply two egg yolks on top of the pitas.

Put the ready pitas into the oven without waiting.

Bake in a preheated oven at 180-190 degrees, with top and bottom heat, until the tops are browned, about 20-25 minutes.

Take the beautifully browned pitas out of the oven.

As you can see, this recipe yields a large amount of pita, with four more still baking in the oven.

The nutritious, soft, and very delicious cracked pita is ready to serve.

Hello from Elif’s Kitchen. Today, I want to share a recipe for soft and delicious minced meat cracked pita, which you will no longer want to buy ready-made. Let’s take 2 cups of warm water into the kneading bowl. Add one tablespoon of sugar, and one packet of instant yeast and mix.

Add half a cup of liquid oil and mix again. Initially, I added 4 cups of flour. Add about a teaspoon of salt, and continue to mix, gradually adding the flour. Once the dough gathers, keep kneading by hand, gradually adding flour. I used a total of 5.5 cups of flour.

As you can see in the video, the dough should be soft, slightly sticking to the hand. After thoroughly kneading the dough, cover it and let it rise in a warm place for about 45 minutes. While the dough is rising, let’s prepare the filling.

Take 400 grams of medium-fat minced meat into a mixing bowl. Add one small chopped onion, 1-2 small chopped green peppers, 1 small-sized, finely chopped red bell pepper, Peel and finely chop 2 medium-sized tomatoes and add them.

Add about a teaspoon of salt, half a teaspoon of black pepper, and a teaspoon of paprika, and knead until well combined. The consistency seemed a bit thick to me, so I added about a quarter cup of water. Mix well again and set the filling aside.

Release the air from the risen dough and take it onto a floured work surface. As you can see, it’s a very soft dough. Sprinkle a little more flour on top and divide it into pieces. I divided it into 14 equal pieces.

Roll and place them on a tray sprinkled with flour. Cover with a fridge bag to prevent drying out. At this stage, we can roll out the dough pieces immediately without letting them rest. Sprinkle a bit of flour on the counter and roll them out into an oval shape with a rolling pin.

Place a few spoonfuls of the filling on the dough, and spread it over the dough as you see in the video. Then, as shown in the video, fold it over. Make sure it’s tightly closed and gently press down with your hand to flatten.

Place them on a baking tray lined with parchment paper, spaced apart. Continue shaping our pitas like this until one tray is full. As you can see, five pitas fit into one oven tray. Brush the tops of the pitas with two beaten egg yolks. Put the ready pitas into the oven without delay.

Bake in a preheated oven at 180-190 degrees Celsius, top and bottom heat, until golden brown, about 20-25 minutes. Take the beautifully browned pitas out of the oven. As you can see, this recipe makes a generous amount of pitas, even four more are still baking.

Our filling, soft, and delicious cracked pita is ready to serve. As you can see in the video, they have browned nicely and are very soft. As you can see the inside texture, I want to show you by cutting one of them with a knife.
