I made creamy Tuscan chicken for the first time tonight!

    Here’s the recipe if anyone wants it!

    **Keto Creamy Tuscan Chicken**

    2 chicken breasts flattened

    1 tsp paprika
    1 tsp garlic powder
    1 tsp Italian herbs seasoning
    1 tsp salt

    Season chicken

    2 tbsp olive oil or butter (or you can use the oil from the sun dried tomatoes which I highly recommend)

    Cook chicken through (about 4 minutes each side) until it gets a nice brown crust then remove to cool

    1/2 diced onion
    5 tbsp minced garlic
    5 Oz julienned sun dried tomatoes

    Sautee onions until translucent then toss in garlic and tomatoes

    1/2 cup Chicken stock
    1 cup heavy cream
    1/2 cup parmesan
    dash of garlic powder and Italian seasoning
    Pinch of salt

    Toss in chicken stock to deglaze, then stir in heavy cream, then parmesan, then seasonings

    3 cups baby spinach

    Toss into the sauce and cook on medium low heat for 3-5 minutes until basil wilts

    Toss chicken back in and it’s ready to serve. I like to cut the chicken into strips so they can get covered in delicious sauce.
