Saffron Rice Pudding / Iranian Sholeh Zard

Ingredients:

🍚 2 cups of rice.
💧 12 cups of water.
🍬 3 cups of sugar.
🧈 50 grams of butter.
🥜 ½ cup of slivered almonds.
🍈 ½ cup of chopped pistachios.
🌹 2 tablespoons of rose water.
🌼 1 cup of brewed saffron.
🍂 Cinnamon for garnish as desired.
Instructions:

Soak 2 cups of rice in some water for at least 1 hour.
Drain the rice and add it to a pot with 12 cups of water. Let the water come to a boil. Do not use Basmati rice; the smaller the grain, the better it is for this dessert.
Skim the foam off the top as it boils. This helps make the pudding clearer.
Allow the rice to cook thoroughly until it’s mushy.
If the water reduces before the rice is fully cooked, add more water as needed.
Once the rice is fully cooked, add 1 cup of brewed saffron (To brew saffron, sprinkle some hot water over crushed saffron strands and let it sit to release its color and aroma).
Then add 3 cups of sugar (use 4 cups if you prefer it sweeter). Do not add sugar before the rice is fully cooked.
Add 50 grams of butter to the pudding and mix well.
Cover the pot with a towel and let it sit for about a quarter of an hour.
Add ½ cup of slivered almonds and ½ cup of chopped pistachios, mix well.
Stir in 2 tablespoons of rose water.
Let the pudding cook for about 10 more minutes. If the pudding seems too runny, allow it to cook a bit longer. Remember, the pudding will thicken as it cools down.
Your rice pudding is now ready.
Pour into serving dishes, garnish with pistachios, almonds, cinnamon, and dried rose petals, and refrigerate until completely cooled. Enjoy!

Add 1 to 2 cup of slivered almonds and 1 to 2 cup of chopped pistachios. Mix well then stir in two tablespoons of rosewater, giving our pudding that signature fragrant. Let the pudding cook for about ten more minutes. If it looks too runny. Let it cook a bit longer.
