– 4 pieces of fresh salmon fillets

– 4 cups of mixed salad greens
– 1/4 cup of extra virgin olive oil
– 2 tablespoons of red wine vinegar

Instructions:

4. In a separate pot of boiling water, blanch the green beans for about 3-4 minutes, or until they are crisp-tender. Remove the green beans and place them in a bowl of ice water to stop the cooking process.

5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to create the dressing.

6. Assemble the salad by arranging the mixed salad greens on a large platter. Top the greens with the grilled salmon, boiled potatoes, hard-boiled eggs, blanched green beans, cherry tomatoes, and Niçoise olives.
