This is the 2nd time making this ice cream recipe and the xanthan gum has clumped again. I've already left it over night to rest.

Should I add more xanthan gum to fix the texture? Can I blend ir with a hand blender? I think last time the ice cream didn't maintain its consistency as well as I'd like.

Any tips on how to avoid this in the future?

    I find that xanthan gum blends better when the base is cold. I personally use a blender to help distribute the xanthan gum. You want to be careful though, as you could accidentally make whipped cream if you’re not careful. What I’ll do to circumvent this is make my base sans cream, and then blend. Once all blended, I’ll then add the cream.

    I found mixing the xanthan gum in with the other dry ingredients (sugar,salt, whatever else) helps from clumping like that.
