Second bowl of the day: Shoyu

    All same ingredients, this time soup is a 50/50 mix and instead of smoked salt I’m using Yamaroku 4 year Tsurubishio Shoyu, probably the most expensive soy sauce I’ll ever consume. The color is super deep but the flavor is just as light due to the higher mushroom dashi ratio.

    Off camera is a boatload of garlic chips, god I love garlic chips
