5 years ago I tried both yeasted and sourdough bread and the 3 loaves I made back then ranged from complete disaster to mediocre. After a 4~ month obsession my bread passion fizzled out.

Today I was a bit sad so I decided impulsively to try to make bread and I’m so happy with the results. Previously bread was smth that 100% scared me and it felt like a puzzle I could never figure out; every loaf I tried to make was like an anxious battle lol.

This time though, I googled an ingredient list and oven temp and just went off my instincts and random info I’ve accumulated from years of lurking on breadit. And somehow it all turned out amazing!

Still room for improvement, but this loaf of bread was rly the win I needed today.

I used:
– 500g flour
– 10g salt
– 340g water
– 10g fresh cake yeast

Proofed for like 100min, then shaped and rested again for 20~ min. Baked at 250c in a preheated Dutch oven with a couple sprays of water on the dough + tray of water underneath the DO. After 35 min, lowered the temp to 230c and took off the lid. Baked for another 15 min.

    Really nice rise. What size banneton did you use. I have 9”. I considering going with 8”.

    You have the yeasty gene, never lost it. The more you bake, the greater a return.
