Late it’s like 8:00 already but I feel like this dinner is fairly fast so let’s get into it so today we are going to be making a tortillini soup with chicken skin and I have made this a few times if you follow me on Instagram you may have

Seen it on my Instagram stories but I love eating this I feel like I eat it every few weeks especially since it’s like still kind of cold outside so it’s a good Comfort meal and I found this recipe on Facebook it’s called a creamy tortillini soup and it has cream in it

But since I can’t use real cream I use just like a dairyfree cream which I will show you in a second so I’m going to prep all of my veggies first so I will need some on and garlic I think I think that’s pretty much everything that I

Need to chop in this video so I just got this chopping device on Amazon so I’m going to be trying it out today if it works and if I like it I’m really excited because I think this will make cooking and just like prepping food so much

Easier but we will see because I’ve never used it before so I’m a little skeptical so I have my onion a knife and a cutting board so I’m just going to put you down and you can see what I’m doing so I have my onion I peeled it and I’m just going

To cut it in half and I like to just cut off these little ends too because I don’t like them this is the first time I’m using this chopping thing so bear with me cuz I am a newbie in this but I’m pretty sure I’m going to cut this in half one more

Recommend this very easy we are going to try to use garlic in this now it comes with this little attachment for garlic I’m not exactly sure how it works so we are going to see I’m not exactly sure so we’re going to just figure this out together so I need a tablespoon of

Garlic so I’m going to say about two cloves of garlic give or take sometimes I use Jarred garlic sometimes I use whole like actual garlic cloves it kind of just depends on what I’m feeling like that day and since I have this new Chopper thing I think I’m going to use a

Real garlic just because it’s kind of fun so two garlic now we are going to go down again onto the cutting board so I’m pretty sure this thing goes in like that ow and be careful because everything on this is pretty sharp like I cut myself earlier so just be careful and then

I I think you just go like That and then the second One Again that was so fast and easy so we’re pretty much almost done prepping the food this is so fast and so easy this next part though is probably going to be the longest and it’s shredding the chicken so you can either use like a chicken breast that you get in those

Packages and then you like cook it and then shred it yourself or what I am doing I just got a whole rotisserie chicken and I’m just going to cut off some of the meat on this chicken and use that so I just have some disposable gloves cuz I don’t like the way that

Chicken feels it’s kind of gross honestly I hate doing this but sometimes it’s just Easier and just like that there’s a whole bowl of chicken and the whole rotisserie chicken is all shredded super easy and all I had to do was put on some gloves and use my hands okay so we are now going to start cooking uh the first step

Is to put butter and olive oil into our pot which I have right here I am using this Earth butter this is dairyfree I’m pretty sure it’s vegan just because we can’t really have dairy in our house because Luca can’t have dairy so I like to use Dairy

Alternatives so in this recipe you’re going to see me use all the dairy Alternatives that I always use so I think I need a tablespoon of this butter and I like these because it literally has just little lines where the tablespoons are so it’s super easy I

Literally just cut it with a knife and then I don’t use olive oil I actually use avocado oil I feel like it’s pretty much the same like I’ve never really noticed a difference but just use whatever oil you want to use if you want to try this recipe so this is everything

That the recipe calls for we have chicken broth our spices we have diced tomatoes tomato sauce tortillini it calls for parmesan cheese but this is the only kind of cheese I have and I feel like that’s good enough we have our onions our or our onions our

Garlic butter this is the whipping cream that I was talking about it’s dairyfree and then of course our chicken and then some frozen spinach so this is a pretty healthy meal oh of course our avocado too or our avocado oil too but I feel like this is a fairly healthy meal it’s

Everything that’s in it I know what’s in it we love that and we’re using a tablespoon of butter like I said we literally just cut it off and put it into the Pot okay and then we’re using a tablespoon of avocado oil and that also goes into the pot And then we’re just going to let that heat up it’s already getting pretty like liquidy so we’re just going to wait for that to heat up and then once it’s heated up we’re going to add our Onions so I apologize so dark so I apologize if this is a little bit yellow but I’m literally you’re you’re with me by the stove so like we did I have this diced onion I’m just going to guesstimate how much we want to use it says a cup but I kind of

Like onions so I’ll show you how much I put in so the oil in the butter is like bubbling so we’re just going To about that much and then I’m just going to use a spoon and mix that all together and we’re going to let that cook a little bit until it’s translucent and then we’re going to add the garlic after but that takes about 5 minutes so I’ll just show how I stir it for Now okay so this is what it looks like now so we are going to add the garlic this is the garlic and then stir that In I forgot that we need to add some flour so this is a cup 1/4 a cup of flour and we just mix that all up so now we after the flour we add all of the Tomato stuff so we have the to diced tomatoes then we have the tomato

Sauce no one said that this was aesthetically pleasing let’s give that a little mix then we’re adding 3 cups of chicken Broth Okay now we are adding our spices basil and I just kind of measure with my heart cuz who knows Italian Seasoning red peppers crushed red peppers like chili flakes and then I’m just going to add a little bit of cayenne Pepper and then give that a Mix some Salt and pepper and then we’re just going to let that Simmer so while the soup is simmering I’m going to grate the cheese I like to use this one cuz I like it when it’s really small so that’s what we’re going to do while the soup is getting Hot Okay so it’s starting to Bubble so I’m just going to add the chicken now don’t mind the mess behind me so we got our chicken that we just shredded and I’m just using the same gloves I’m just going to put a handful in maybe like this much maybe a little bit more Beautiful okay now that the soup is boiling a little bit we’re going to add the tortillini and we’re just going to stir that until it is all nice and soft all righty so we’re take we took the soup off of the burner and now we’re going to add the

Rest of the stuff so it says a whole 12 oz bag of spinach I don’t know how big this bag that I have is but I don’t like to use the whole bag so I like to just use like three or four of these cubes cuz that’s what it looks

Like feel like that’s a good number we’ll just add those into the soup so they melt a little bit and then we’re adding some Parmesan cheese well not parmes on cheese whatever kind of cheese I Have and then last but not least is the cream which is spilling and adding cream like this makes the sauce kind of look like a rosé sauce which is probably one of my favorite pasta sauces there ever was and look how nice and creamy that looks now

So we’re just going to let this simmer a little bit and let the spinach kind of defrost and then it’ll be ready to eat so I will let this just sit in the pot for a little bit just to all marinate together and I will show you the finished product after
