It’s like a little party in my mouth right now M hey guys welcome back to my channel I’m Myra from low carb love now most of you know I’ve lost over 100 lb by making healthier alternatives to some of my favorite foods now I love Mex meic food I’m Mexican I grew up eating all the

Mexican dishes so um one of my favorite things to recreate and make it low carb and make it healthier and lighter are my Mexican dishes so today we’re going to make it’s a very like easy lazy version of enchiladas but it’s going to be low

Carb and it’s still going to be nice and Hearty because I feel like when you’re craving enchiladas not only you craving the The Taste but it’s also just like a feel like a feeling right like you want to feel nice and full and so we’re going

To make it’s going to be super delicious but it’s going to be low carb it’s going to be healthy and weight loss friendly so um this is actually one of my faves I love to make it with the green sauce but I figured we’ just like kind of switch

It up and do a little red sauce first things first you need a little baking dish but you could do it in a glass like pyx Bowl you could do it in whatever you typically bake things in you could you could make this dish okay now first thing usually enchilada like an

Enchilada casserole will have rice at the bottom but remember we’re keeping it lighter we’re keeping it lowering calories and also lowering carbs so we’re going to use some cauliflower rice now you can use the fettes but I think the ca rice just makes it feel like rice when you’re actually eating it you

Cannot taste that it’s cauliflower you just get the texture and it’s like rice so we’re going to do the rice so we’re just going to do a nice good layer of cauliflower Okay so kind of flatten that out and now obviously cauliflower doesn’t have any seasoning whatsoever so

We’re going to go ahead and do a little salt and pepper I want my I want my dish to be nice and flavorful so we’re going to add a little onion powder garlic powder and you could always cook the cauliflower rice just to like if you

Wanted to make it super super quick you could even throw it in the microwave just make sure you ring out the excess water if you do it that way but if you do it that way it’ll come out in literally like 10 minutes because everything will be already softened and

Cooked and all you’re looking for at that point is the cheese be nice and melty over everything so we have our rice now this is optional but I have some low carb tortillas on hand so I’m literally just going to throw in my low carb tortillas right on top and this is

Going to be kind of like a just going to be like a little division from the from the chicken and and our rice I don’t usually add the tortillas because I like the chicken to kind of go into the rice so I think it really just depends if you have a thing with

Textures and you want the division then you can add the tortillas just like this if not then just place the chicken on top and you’ll be good you’ll be just fine okay and now for our chicken so I ended up just making my chicken because I didn’t have a rotisserie chicken on

Hand but again if you are trying to make like the quickest of the quickest dinners just pick up a rotisserie chicken shred it and then obviously you skip the whole step I ended up cooking this I did season it with a little salt and pepper but if you you know this is

Literal just personal preference you can make your own chicken you can get a rotisserie chicken but this right here is adding so much protein as you can tell we have so far we have the cauliflower the low carb tortillas are optional but cauliflower chicken so you

Have a lot of nutrients going on very low fat which is important if you are you know if you are trying to stay on track you’re doing like a healthy meal prep and then right now with everything that we’re going to add they’re going to be super delicious so just going to make

Sure that we got have a little extra flavor and this is one of those easiest easiest of the easiest meals you can make we’re just going to go ahead and top our chicken with our red enchilada sauce and if you’re not into the red use

The green the green is so good and they have different brands of enchilada sauce out there this is the only one they had available but there are some that are better tasting now if you want your rice to be full of the sauce as well you can

Also do a layer of the sauce down at the bottom I actually like it to be a little bit more of a division where my chicken is full of the sauce and cheese and then you have the cauliflower where it’s like mimicking rice so I feel like I’m having like enchiladas and

Rice but this is all personal preference here it’s all going to work and it’s all going to taste delicious so then I like doing a little Mexican blend cheese you can do mozzarella you could do pepper jack you could do whatever so now you just want to make sure that your oven’s

Preheated to 375° I’m going to put it in for about 20 to 25 minutes and then I cannot wait to show you how this looks when it comes out but this is easy peasy lemon squeezy the perfect dinner super quick and it is so delicious definitely

Like a crowd pleaser okay so I ended up throwing it under the broiler for about 2 minutes and you cannot beat this throw it on the table for dinner and everyone is going to be like all over this I’m telling you this right here is one of

The easiest dishes to make and it’s super super flavorful hits the spa every time just I just can’t okay and take it over the top I just top it with a little bit of fresh cilantro and now we’re going to cut right into this okay okay so for the

Enchilada casserole I personally love to serve it with a little queso fresco I also have CA cheese these are just um cheeses that we use to top our enchiladas with a little bit of that little guac or I mean a little avocado slices now this is just me I love love

Love pickled onions so these are just homemade pickled onions I actually just made them earlier today and that is it okay finish it off with some cilantro and take a look at this the easiest dinner in less than 30 minutes so delicious you have you’re going to get

That Mexican craving out of the way cuz I know when I’m craving Mexican food nothing else does the trick so super quick super easy high in protein nice and Light lower in calories it’s this is definitely like a lighter version of a traditional chicken and chilada casserole or just a lighter version of

  9. Hello, I like the easiness of the recipe and will try it. I have been eating enchilada casserole for at least 50 yrs. It varied a little as I went from California, Montana, Nevada and New York. But the idea of rice at the bottom is new to me. I will try your recipe using the cauliflower rice, the more veggies the better for me! Thank you!
