INGREDIENTS
1 roll of puff pastry
4 slices of ham
4 slices of cheese
4 hard-boiled eggs
200g (1 cup) of mashed potatoes
40g (¼ cup) of parmesan
A pinch of black pepper
Egg wash
Sesame seeds
 
METHOD
1. Preheat the oven to 190C/375F.
2. Roll out the puff pastry and cut out 4 squares (12x12cm) and 8 stripes (1.5 cm wide).
3. Mix mashed potatoes with parmesan and black pepper.
4. Wrap eeg in ham.
5. Place a spoonful of potatoes on top of the pastry. Make an indent in the middle and lay the egg on top. Cover with a slice of cheese and pinch the edges of the pastry to cover the egg completely.
6. Flip each pastry egg and brush with egg wash. Layer prepared drops of the pastry on top, and brush with egg wash also. Sprinkle with sesame. Bake for 25 minutes.
