This easy veggie side dish gets a little kick from red pepper flakes, plus a refreshing hit of thyme and bright lemon zest.

Broccoli and carrots, pretty simple and pretty classic side dish, right? I took some broccolini, I cut the end off. I gave it a rinse, I let it dry, and I threw it on this tray. Then I took a whole bunch of carrots, I got these cute little rainbow ones.

Anyway, all I did was cut the carrots in half lengthwise. Done! So this is a bunch of carrots, two bunches of broccoli, for six people. I’m going to season this, well first I’m going to kind of shellac it with some olive oil. Then a little salt and pepper. A little fresh thyme.

Little sprinkle of chili flakes. A little granulated garlic and onion, ’cause they’re buddies and like to go everywhere together. A little lemon zest. And when it comes out of the oven, we’ll hit it with some juice. That’s it. Shove it in the oven. When it’s brown at the edges, it’s done.

Easiest side dish ever are roast broccolini or broccoli with our roast carrots. Little vegetables alongside.
