Turn up the heat in your salad game with our Spicy Roasted Chickpea Salad! Crispy, fiery chickpeas meet a vibrant mix of fresh veggies, creating a flavor-packed explosion that’s as satisfying as it is delicious. Spice up your salad routine and get ready for a mouthwatering kick!

Ingredients
Roasted chickpeas:
• 125g chickpeas
• 1⁄2 tsp smoked paprika
• 1⁄2 tsp cumin
• 1⁄2 tsp ground coriander
• Pinch of cayenne pepper
• Pinch of chilli flakes
• Pinch of salt
• Low calorie oil spray

Salad
• 50g baby leaf salad
• 30g cucumber, sliced into half moons
• 4 cherry tomatoes, halved
• 20g roasted red peppers, sliced
• 15g red onion, sliced
• 15g feta, crumbled
• 10g black olives, halved

Dressing
• 1⁄2 tbsp extra virgin olive oil
• 1 tsp red wine vinegar
• 1⁄4 tsp Dijon mustard
• 1⁄4 tsp oregano
• 1⁄4 tsp garlic powder
• Pinch of salt
• Pinch of freshly ground black pepper

Method:
1. Preheat oven to 200c.
2. Mix together chickpeas with paprika, cumin, coriander, cayenne, chilli, salt and a few sprays
of low calorie oil spray. Toss until they are all coated well.
3. Spread evenly onto a lined baking tray.
4. Place into the oven for 30-35 minutes, giving them a shake every 10-15 minutes.
5. Mix together salad dressing ingredients and place to one side until ready to serve.
6. Mix together all of the salad ingredients and top with roasted chickpeas, drizzle with the
dressing and enjoy.
