CREAMY SPINACH. PEEEL THE ONION AND DICE IT FINELY. GARLIC. BLANCH THE SPINACH IN BOILING WATER FOR 3 MINUTES THEN IMMEDIATELY PUT INTO ICE WATER. FINALLY DRAIN IT AND REMOVE THE WATER. BUTTER WITH A LITTLE OIL. SAUTE THE ONIONS. HEAVY CREAM. HEAT UNTIL IT THICKENS. ADD THE SPINACH. GARLIC, SALT AND BLACK PEPPER.

A SPINE OF NUTMEG. SERVE SPINACH WITH CZECH CUISINE OR AS A SIDE DISH TO MEAT.
