Here’s a fantastic quick midweek meal. If you’re tired of paying pizza parlour prices, just make your own. You can top it any way you like. Be sure to press out the pizza dough from the middle to the outside edge. This way the air moves out to the crust and ensures a fluffy pizza edge.

Dough
360g All Purpose Flour
1 Tsp Yeast
1 Tap Salt
190g water- (warm but do not boil) 1/3 of the water in the microwave for 20 seconds then add it back to the remaining 2/3. Add the yeast to the 190g of water. Ideal water temperature is 35-40C
3Tblsp Olive Oil
Massage the dough for 10 minutes to get a silky smooth dough then cover it with plastic wrap and a clean cloth. Place it in a warm place and let it rest for 1 hour.

Sauce
3 Tomatoes
1/2 Tap Black Pepper
1Tsp Salt
1/4 Tsp Red Chilli Powder
2 Tbsp Olive Oil
Cook over low heat with the lid on until the sauce thickens.

Pizza Tooping
Sauce
200G Mozzarella
Basil to taste

Preheat oven to 520F
Bake for 5-8 Minutes ( vary depending on your oven)
