Spinach Fatayer
I had to make a triple batch of this because my family cannot get enough of it!
Ingredient:
3 cups AP flour (1/2 cup more for kneading)
1 Tbs instant yeast
1 Tbs baking powder
2 Tbs sugar
1 tsp salt
1/4 cup neutral oil
1/2 cup water, room temperature.
250 g plant-based yogurt (I used soy)
3 lbs fresh spinach
1 cup chopped green onions
1 chopped onions
2 Tbs pomegranate molasses
1/4 sumac
1/4 cup fresh lemon juice
1/3 cup extraversion olive oil
1 tsp salt, or mortar taste.
Directions:
In a large bowl mix the AP flour, salt & baking powder. Add the sugar and yeast to the water, stir and add to flour, add the yogurt & oil. Knead the dough by hand for 10 minutes. Drizzle some olive oil on top of the dough, cover with plastic wrap, and let rest for 2 hours. Preheat oven to 500°F, or as high as the oven goes. Line 2 baking sheets with parchment paper. Wash and dry the spinach, chop, and massage the leaves with salt and the chopped onions, squeeze the access water from the spinach. Add pomegranate, molasses, sumac, lemon juice, and olive oil. Taste to adjust the seasoning. To make the little pies, Divide the dough into equal size mini balls. About 2 inches in diameter. Stretch out each bowl and stuff with 1 heaping Tbs of the spinach mixture. Close it in an open triangle shape. Bake in the prepared trays for about 7-10 minutes or until dark golden brown. Enjoy!
