I cannot recommend the salad enough. Pan seared halloumi over a bed of peppery, bright watercress. It’s spicy. It’s sweet. It’s salty. It’s crunchy. The salad has everything. You’ll start by charing a jalapeno.

I do this on my gas stove top then covered in a bowl to let it steam. Next, slice halloumi into quarter inch thick pieces then dry well with a paper towel. Combine all the salad dressing ingredients including the jalapeno. I just removed the seeds then blend

Until very smooth pan sear the halloumi until golden brown then serve on a bed of watercress. Top with pears, marcona almonds and some of that delicious sweet and spicy vinegarette.
