This Beet Orange Salad is a simple and flavorful salad that balances the sweetness of beet with the tangy citrus notes of fresh oranges, while creamy feta cheese and walnuts add a delicious texture to every bites.

Ingredients:
► One medium red onion
► 3 large beets
► One medium orange
► A bunch of fresh parsley
►1 cup Walnuts
► 100g feta chesse.
► Arugula

Dressing:
► The juice of an orange
► 1 tbsp. mustard
► 1 tbsp. basil vinegar
► 3 tbsp. olive oil
► Salt and black peppers to taste

Red onions are rich in B vitamins such as folate and B6. They may improve blood flow. They promotes a healthy digestive system and prevents cancer They are a great source of antioxidants which boost imunity Cut the stems off a bunch of fresh parsley and chop it

I personally prefer this salad with parsley but you can also use cilantro instead or even combine the two Parsley is loaded with vitamin K which has a positive impact on bone health Don’t chop it too finely, bigger pieces have more flavor

In this recipe you will need 4 medium boiled beets You can roast the beets or boil them to make this recipe. Beets are very low in calories with no cholesterol and rich in vitamins They are a great source of folate/B9, iron, vitamin C and fibers They can reduce high blood pressure

Studies have shown that beets can significantly lower blood pressure after only a few hours of consumption Slice your beets or dice them, it’s up to you. Place the beets in a large mixing bowl… Using a sharp knife, remove the peel and pith from the oranges, then cut into segments.

Bear in mind that an excess of vitamin c may lead to nausea and vomiting Cut one cup of walnut into pieces neither large or small Walnuts are rich in nutrients and deliver healthy fats They can benefit brain health and help to decrease blood pressure

In this recipe, we will need 100g of feta cheese Cut it into small pieces Feta cheese is a healthy choice compared to other cheeses It’s rich in calcium and low in calories and fat. It also contains a high amount of B vitamin and phosphorus Now, let’s prepare our dressing salad!

We will need the juice of an orange 1 tbsp mustard 1 tbsp. basil vinegar 3 tbsp. olive oil Olive oil contains a healthy fat that’s rich in vitamin E Salt and black peppers to taste 2 chopped garlics Garlic is also an excellent source of antioxidants Mix well

In this recipe, we will need arugula Toss the arugula with some dressing. Do not use all of the dressing as we will need it for the rest of salad Arugula is a very low-calorie food and it has many benefits.

It is an excellent source of nutrients, including vitamin C, calcium, folate, iron, fibre and protein Add the onion, parsley to our bowl of beets. Add the rest of dressing Mix well until eveything is well combined Start by placing the arugula at the bottom
