March 25th – the National Independence Day of Greece
Blue is for Greece. For me, there is nothing more blue than Greece. Blue sky, blue sea, blue flag. I got my inspiration for this recipe and the blue photo shooting from the Greek flag.

The white and blue flag of Greece has nine stripes that represent the nine syllables of the phrase “Freedom or Death” (E-le-fthe-ri-a i Tha-na-tos in Greek), the motto of the Greek Revolution of 1821. The blue and white colors have been identified as the traditional colors of Greece: blue symbolizes the sky and the sea, white symbolizes the clouds and the waves.

March 25th is the National Independence Day of Greece. I want to dedicate this post to people who are fighting for their rights, for freedom, and to the dreamers like me who are picturing peace all over humanity.

Greeks around the world are eating Cod with Skordalia for March 25th. It is a tradition. I cooked cod, too, but I decided to cook it with my fresh pasta.

First I made the pasta dough. It was my first time so I used a basic recipe for pasta. Eggs, flour and a bit of salt.

The blue and white colors have been identified as the traditional colors of Greece: blue symbolizes the sky and the sea, white symbolizes the clouds and the waves. For the blue pasta dough I did the same recipe but I added a large amount of blue food coloring.

My little one enjoyed the pasta making as well. Greeks around the world are eating Cod with Skordalia for March 25th. It is a tradition. The final result of making the Greek flag. Fresh pasta needs just 2 mins in boiling water.

I cooked cod, too, but I decided to cook it with my fresh pasta and a sauce of lemon, garlic and butter. The result was delicious.

The blue pasta was so pretty for the photography but because of the large amount of artificial coloring we decided not to eat it. I suggest you make the recipe but not the coloring. Check at www.greekandsimple.com for more details of this recipe.
