5 roma tomatoes 2 manzanos 1 habanero (because I’m a wimp) 1/2 onion 3 cloves of garlic juice of 1 small orange or clementine cilantro and salt to taste Char all ingredients (I left a small wedge of the onion raw out of preference). Add everything to the blender and squeeze orange juice over everything. Blend to desired consistency (I pulsed till I got most of it combined, then added cilantro at the very end for the last few pulses). I think I could use a little more citrus, so I might add a bit of zest next time. Incredibly refreshing and bright, but still savory notes from the charring. It has just enough heat to be able to be enjoyed on its own, but still hot enough to cut through fatty or more heavy dishes.

This sounds lovely, although I have never seen a manzano before. Or even heard of them.
