Spicy Lobster Pasta

Ingredients

2 tablespoons olive oil
1/4 teaspoon crushed red chile flakes
4 cloves garlic, minced
1 Fresno chile, minced (leave in the ribs and seeds for extra spice)
1 medium yellow onion, minced
1/2 cup dry white wine
One 28-ounce can whole tomatoes (preferably San Marzano)
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 pound spaghetti
Two 8-ounce lobster tails, fresh or frozen and defrosted
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh mint
Good-quality extra-virgin olive oil, for drizzling, optional

Directions

Heat the olive oil in a large skillet over medium heat. Add the chile flakes, garlic, Fresno chile and onions and cook until the onions are tender and fragrant, 5 to 7 minutes. Add the white wine and bring to a low simmer. Stir in the tomatoes, salt and pepper. Reduce the heat to low, cover and simmer until reduced slightly, 35 to 40 minutes.

Bring a large pot of water to a boil. Add the spaghetti and cook until al dente according to the package instructions. Reserve 1/2 cup pasta water, then drain the pasta and keep warm.

Add the lobster tails to the sauce, cover and cook for about 5 minutes (they will not be cooked through at this point). Remove the lobster to a cutting board and carefully use a knife to split open the tails on the backside. Remove the meat and coarsely chop.

Add the lobster meat back to the sauce along with a few tablespoons of the pasta water and the spaghetti. Toss to coat, adding more pasta water if the sauce is too dry. Toss in the parsley and mint. Drizzle with a good-quality extra-virgin olive oil, if desired. Serve immediately.

Spicy LOBSTER Pasta with Katie Lee | The Kitchen | Food Network

So we’re gonna make a spicy lobster pasta inspired by katie’s husband ryan so first here in the pan i’ve got some olive oil down some onion garlic and a fresno chili you can leave the ribs in and the seeds in for a little bit of spices

Lobster wants spice now to this what are you gonna add in um you know what so this is what we’re gonna do at the end katie likes to toss it with some fresh herbs so that’s parsley and mint which i really love for interesting just give me

A nice rough chop on that i can do that jeff you’re obviously on salt water going down over there uh when they’re done reserve some of that pasta water because obviously katie knows what’s up we’re gonna thicken the sauce a little bit with that pasta i have one

Job literally and then you just took it from me and then in this thing you need it okay all right so now choose this right here for jeff without anybody got an entire can of whole tomatoes oh i love whole tomats let me show you a little trick i like with whole tomatoes

I feel like when people do the can of whole tomatoes they use their masher like this huh no counter-intuitive come in here and break them down like that are you kidding me i splatter less splatter i don’t see zero i see zero zero splatation splatter minimal splitting well this is

Going this is a historic moment we’ve been mashing our whole life for a whole day we are you joking no i never saw that well this i mean it’s just look at it it makes more sense yeah it is a little bit noisier but look it did the job and we

Didn’t splatter anything on ourselves now to this i’m going to add a little bit of dry white wine you’re going to cover this up and cook this for about 35 to 40 minutes it’s going to get all like flavorful together um all the tomatoes are going to cook down it’s going to

Look like this look at this guys gorgeous right so look at the beauty of that now i’ve got two lobster tails so the story with katie and ryan is that if it’s a special occasion ryan loves to make lobster tails for katie and if it’s a special

Occasion katie oh look at them right there katie loves to make pasta for ryan so which is every day for katie yeah oh she does not leave a cart behind trust me so putting these together in a dish is very loving for valentine’s day yeah they’re leaving him behind yeah

Thus probably gets a little bit of the leftovers right we see how gus is treated backstage when he’s here i put the lobster tails right into the pot you’re gonna cover this up for five minutes oh look at that two great things happen here the lobster obviously steams

And cooks but not all the way through because we’re going to take it out chop it put it back in twirl it and then it’ll finish off well yeah give it a little twirl um but also that shell flavor gets into the tomato in that short amount of time and really makes it

Flavorful all right so after about five minutes you’re gonna take the lobster out and then hopefully it’s cool enough to touch and then just crack one down the center is it is it cool enough to touch it yeah yeah i like to just get in there like that

Exactly cooked too it is you can really look at that the tomato poached lobster tail another two things we got the chopper secondary chopper just really doing so much today really proud of you look at that look at that meat so you keep it in

The shell like that no she takes it out gives it a nice little chop so i like to kind of go in hey for those people that are on a budget it’s a good way to kind of extend the life of a lobster tail too

In a pasta dish you get all the flavor you get chunks of the meat you know it’s a little more economical than one lobster tail per person it is i mean we’ll also go to the freezer section you know you don’t have to buy this fresh obviously go to the freezer section um

And buy them in bags and a lot of times at the grocery store they sell it already steamed for you uh but i would argue that it’s nice to get it raw so you can get that flavor into the pot all right gz i did all the messy

Work for you if you don’t mind giving that a rough chop for me and giving it back okay i’m gonna wash my hands really quick that this pasta is perfect i got the colander in the sink for you uh the sauce is ready over here we want

Right here this is a delicious get it together pasta cooked perfect the the spice is like on fire but in such a good way lobsters cook perfectly delicious clean luscious lobster flavor you

  1. I make a, “Lobster Alfimara,” which is so good too! I don’t like just straight marinara sauce in this combo. The sweet lobster 🦞 just tastes better with that sweet cream, to me anyway..:) I also use small cheese tortellini..:)) Delicious!! 😘👍🥰
