►Ingredients

►Spices

1 tbsp smoked paprika
1 tbsp black pepper
1 tbsp garlic granules
1 tbsp cayenne pepper
1 tsp cumin
1 tbsp brown sugar
2 tsp oregano powder
2 tsp salt
1 tsp msg

►Lamb Ribs Prep

1 – 2 Rack of Lamb Ribs (Try to get large ones)
Dry the ribs with paper towel
2 tbsp oil
2 tsp brown sugar
Some butter
Glaze

►BBQ Glaze

1/2 cup chipotle BBQ sauce
1/4 cup hot sauce
1 tbsp ketchup
2 tsp worcester sauce
2 tsp light soy sauce
3 tbsp peach nectar
1/4 cup pickle juice (or 2 tbsp vinegar)
1/2 tsp salt
2 tsp spices

►Chicken Prep

1.3kg or 2.9lbs whole chicken
3 tbsp oil
2 tsp black pepper

►BBQ Beans

1 small red onion
Half green pepper
1 bird eye chili
Some jalapenos
3 tbsp oil
450g baked beans
1/2 cup water
1/4 cup BBQ sauce (add more if you want)
2 tsp BBQ seasoning
Pinch of salt
50g butter

Aside now for the lamb I’m using rre of lamb ribs I’ve cleaned the rack and removed the excess fat if you notice there’s a thin membrane on the back of the rack make sure to remove it it should easily come off with the help of your hands or just use your knife just

So we can season this properly now you want to add some oil onto there both the front and the back oil is going to act as a binder for our spices you could also use mustard instead you want to really massage that in cover all

Spots and now you want to apply a thin layer of dry rub all over the lamb rack use your hand as a guide and make sure to cover all Corners once youve added the seasoning make sure you tap it down as well just so it stick to it and now

You want to do the same from the other side all right that is briefly season now you want to place the lme on a baking tree that has been aligned with a foil paper make sure the bone side is down or in device is all charged up grab
