These puff tarts topped with ricotta cheese, olives and tomatoes are simply delicious and will make an excellent lunch or snack.

Ingredients:
– 320g puff pastry sheet
– 4 tsp black olive tapenade or pesto
– 150g ricotta cheese
– 50g pitted black olives, sliced
– 2 medium tomatoes, sliced
– 4 tsp dried oregano
– 3-4 fresh basil leaves, chopped
– black pepper

Tomato ricotta and black olive puff tarts 320g puff pastry cut into 6 even rectangles score a 1cm border around edge of each rectangle score the inside with a fork 150g ricotta 25g sliced black olives 1.5 teaspoon dried oregano mix well spread 1 teaspoon olive tapenade on each piece

You can also use pesto if preferred add the ricotta mixture on top layer over sliced tomatoes top with 25g sliced black olives black pepper dried oregano bake for 25 minutes at 200°C sprinkle over fresh basil leaves enjoy! please like and subscribe if you enjoyed this video
