How to roast potato without oven | No oven roasted potato
This garlic herb roasted potatoes is one of the best no oven roasted potatoes I have ever made. It’s simple yet extremely flavorful. The slow cooking ensures it gets the ideal roasted texture with staying creamy inside.

*INGREDIENTS*
2 lb/ 1 kg starchy potatoes
2 sprigs rosemary (sub with thyme, sage/dried herbs)
5-6 cloves garlic
4 tbsp olive oil
1 tbsp salted butter (Add salt to taste if using unsalted butter)
Salt and pepper

Tips:
– Using cast iron skillet or a heavy bottomed pan helps hold the heat for longer and roasts the potatoes well. If using a nonstick pan, the process might take longer
– Start with low flame to infuse the oil with garlic and herbs. Increase to medium low while roasting the potatoes
– Using baking soda while boiling the potatoes helps in even browning while roasting
– If you can’t access herbs, you can skip it and just use garlic
