Healthy Caesar Salad
But with a lot more crunch.

Is is salad bowl season ??
A delicious high volume high in protein salad bowl.
TBH is there anything really Caesar about this? Lol but it had chicken and parmesan!

You don’t have to Marinade the chicken, trust me it’s worth it.
427 cals 52g protein 14g fat 23g carb ( nutritional value will vary)
Serves 3

SALAD
1 bag or whole lettuce (ice berg or what every you fancy)
150g Cherry tomatoes
200g Cucumber
1 large orange pepper.
30g thinly sliced Parmesan.
(Throw in some anchovies if you fancy I just don’t like them)

DRESSING
2% greek yogurt ( 150g)
1 garlic clove minced
10g olive oil
1tsp dijon mustard
25g grated parmesan
1tsp salt
Juice 1/2 lemon
Blend
Add 1 tbsp water at a time to thin it out..

CHICKEN MARINADE (Optional)
500g skinless chicken breast
Juice of 1 lemon
1 Tsp Dried Basil
1 Tsp Garlic Powder
1 Tsp Dried Oregano
1 Tsp Onion Powder
1 Tsp Salt
1tbsp Honey
1tbsp Mustard
Optional 1 tsp chilli flakes.

How to..

1. Make your delicious marinade.
2. Flatten chicken ( so therapeutic ) and pop into a container , cover in marinade and let rest for at least 30 min.
3. Prep all of your salad ingredients and add to a big bowl.
4. Make your dressing, add a tbsp of water at a time to thin it out if you want your dressing to go that bit further.
5. Air fry your chicken 180 for 10 mins.
6. Your chicken should be pretty tender and spreadable, the perfect salad chicken.
7. Mix chicken, salad and dressing together.
8. Top with extra Parmesan
