RECIPE:
Makes 10 mini cheesecakes

150g (10 pieces) Digestive biscuits (Graham crackers)
60g (1/4 cup) melted unsalted butter
200g (1 cup) soft cheese (cream cheese such as Philadelphia)
50g (1/4 cup) sugar
1 tsp vanilla extract
200ml (3/4 cup) whipping cream / heavy cream (minimum 33% fat)
150g (1 cup) fresh raspberries + 10 pieces for decoration
100g white chocolate

Can be stored in the fridge for up to 3 days or in the freezer in the paper cups up to 3 month until ready to serve, then decorate once you take it out the freezer and ready to serve.

Hello dear friends! Hope you are all well 💗 150g biscuits (Digestive or Graham crackers) (10 Digestive biscuits). Crush them. 60g (1/4 cup) melted unsalted butter. Mix well. Put 10 paper muffins cases in a muffin tray. Divide crushed biscuits between 10 cases. Which country and city are you watching me from?

Set aside. 200g (1 cup) soft cheese (cream cheese such as Philadelphia). 50g (1/4 cup) sugar. 1 teaspoon vanilla extract. Whisk until smooth (for about 20 seconds). 200ml (3/4 cup) whipping cream (minimum 33% fat).

Whisk until stiff peaks form. Stop whisking as soon as peaks hold shape (you will feel the cream is getting thicker). Don’t overwhisk. 150g (1 cup) fresh raspberries. Mash slightly with spatula. Add to cream. Mix well. Put the cream in a piping bag. You may need 2 piping bags. Cream layer.

Pipe the cream tightly to the sides. Even it out while pressing down gently at the same time. This recipe makes 10 mini cheesecakes. Put it in the freezer for at least 1 hour. 100g white chocolate. Melt it in a microwave or hot water.

If you prefer not to heat up plastic bags, you can first melt the chocolate and then put it in a piping bag. After 1 hour in the freezer. Remove the paper case. Melted white chocolate. Fresh raspberries. Enjoy 💗
