Recipe in English:

Ingredients:
Prepare Dough:
-Warm water ¾ Cup
-Bareek cheeni (Caster Sugar) 1 tbs
-Khameer (Instant yeast 3 tsp
-Bareek cheeni (Caster sugar) 1 tbs
-Himalayan Pink Salt ½ tsp
-Anda (Egg) 1
-Cooking oil 2 tbs
-Maida (All-purpose flour) sifted 3 Cups
-Cooking oil 1 tbs
-Cooking oil 1 tsp
-Til (Sesame seeds) ½ Cup
-Water ½ Cup
-Honey 2 tbs
-Cheddar cheese grated as required
-Mozzarella cheese grated as required
-Sausages sliced

Directions:
Prepare Dough:
-In a bowl add warm water, caster sugar, instant yeast, mix well, cover & let it rest for 5 minutes.
-Add caster sugar, pink salt, egg, cooking oil, half quantity of all-purpose flour & mix well until gluten forms.
-Now gradually add remaining flour and mix well until gluten is developed.
-Add cooking oil, mix well & knead until dough is formed.
-Grease the dough with cooking oil, cover & let it proof at warm place for 1 hour or until double in size.
-In a frying pan add sesame seeds & dry roast on low flame for 2-3 minutes or until golden & let it cool.
-In a bowl add water, honey & mix well then set aside.
Prepare Simit Pizza:
-Transfer the dough to a flat surface, sprinkle dry flour & knead the dough.
-Take a small dough (80g) & make a smooth ball, sprinkle flour & roll out in oval shape.
-Stuff with cheddar cheese, pinch & seal the dough then dip it in honey syrup from the flat side than smear the wet side of dough with toasted sesame seeds.
-Place it on a flat surface (sesame seeds coated side upwards), Make a slit in dough with the help of knife & open the pocket & spread slightly.
-Bake it in preheated oven at 180C for 10 minutes.
-Take out from oven, in the pocket, add grated mozzarella cheese, sliced sausages & bake again in preheated oven at 180C for 6-8 minutes or until cheese melts.
-Cut & serve with Turkish tea or sauce (makes 8-9)!

-Ab is may bareek cheeni, pink salt, anda, oil, or half maida daal kara chi tarah mix karen k gluten ban jaye.
-Ab bacha hua maida mila kar mix karen or oil daal kara chi tarah se atta goondh len.
-Oil se grease kar k dhak kar garam jagah par 1 ghanta k liye chor den k double hojaye.
-Aik frying pan may til kar halki anch par toast kar k golden karlen or Thanda honay rakh den.
-Aik bowl may pani may honey daal kar mix karen or alag rakhden.
Prepare Simit Pizza:
-Dough ko bowl se nikal kar flat surface pe rakhden, flour charak kar goondh len.
-Aik chota paira len (80g) or flour charak kar ball bana len phir bailan ki madad se oval shape may bail len.
-Beech may cheddar cheese daal kar achi tarah band karen. Ab isko honey syrup may dip kar k til se coat karen.
-Flat surface pe rakh kart il wali side pe knife se cut lagayen or pocket ko phaila kar khol len.
-Preheated oven may rakh kar 180C pe 10 minutes tak bake karen.
-Oven se nikal kar pocket may mozzarella cheese daal kar sausages k slice rakhen or dubara oven may 180C pe 6-8 minutes tak bake karen.
-Cut kar k Turkish tea k sath serve karen (makes 8-9)!

  3. Nice recipe, but it's too white for Turkish simit. You need to use pekmez (grape molasses) instead of honey to give it its original dark color
