  3. I've done something similar to this before but I cooked the porcetta whole and then sliced it and seared the cut sides to make them crispy.

  4. Trips me out hearing skin on is hard to find, its all we have here, but then we dont get full ribs and a lot of other cuts that the US has

  5. I'm normally with Chud 100% but I've eaten quite a bit of porchetta and I think the tomato sauce can only detract from the finished dish. Steak idea good though and lemon zest goes for sure, I've used it in my own porchetta plenty of times.
    Ideally he could have cooked some without the sauce and compare.
