You’re going to LOVE this easy, tasty wrap that has so few calories but is packed with flavor. I love the lettuce wraps that are so popular in Thai cuisine so I’ve taken that as a starting point and made the idea Greek, with a lot of the same ingredients that are used in a classic Greek cabbage salad. You can add almost anything to this filling in terms of herbs and cheese. Feta works very well, of course! I like to keep it simple and serve it with a little Greek yogurt on the side.

If you’re hungry for a snack, tempted to hit the bread or chips, but there’s still a little voicing urging you to eat something lighter, this is it!

Here’s what you’ll need:

4 large tender Romaine lettuce leaves
1 cup shredded cabbage
½ cup shredded purple cabbage
1 large carrot shredded
1 cup chopped arugula optional
2 pickled pepperoncini peppers or more, to taste. Seeded and julienned
8 cherry or teardrop tomatoes halved or quartered lengthwise
2 Tbsp chopped fresh oregano
2 Tbsp chopped fresh mint
For the Dressing
2 tsp hot mustard powder
2 Tbsp Greek yogurt
Grated zest of 1 lemon
1 – 2 Tbsp lemon juice to taste
2 Tbsp extra virgin Greek olive oil
Sea salt to taste
Greek Yogurt optional, to serve
Instructions
Combine the shredded cabbages, arugula,if using, grated carrot, pepperoncini, tomatoes, and herbs in a mixing bowl. Season with a little salt.
Whisk together all the dressing ingredients and stir it into the salad filling.
Place the Romaine lettuce leaves in front of you and place a quarter of the salad on each of the leaves. Roll it up like a wrap, tucking in the ends so that the filling doesn’t fall out.
Serve, with a small bowl of Greek yogurt on the side if you like.
